Chamisal Wild (Rocambole, Hardneck) -
Very Rare. This Rocambole garlic came to South West with the early Spanish settlers in the mountain valleys of northern New Mexico.
This garlic has an earthy sweet flavor with a lingering afterheat. 8-10 cloves per head, mid-season harvest, stores 4-5 months.
Garlic survives bitterly cold winters underground and then grows rapidly when the weather warms in spring; bulbs in summer. Garlic needs fertile soil with lots of organic matter. The soil needs to remain uncompacted through the long growing season. It is a root vegetable, with the bulb growing underground.
